Roots’ Michelin-Starred Chef Tommy Banks announces limited menu

The team at Michelin-starred restaurant Roots in York, from The Tommy Banks Group, will host a series of limited dinners celebrating the latest success of its chefs that featured on The Great British Menu.

The exciting prospect will see three Roots chefs present the very dishes they cooked on the show to the public, as part of a wider tasting menu. This will allow diners to get an exclusive taste of the recipes the judges went crazy for.

Callum Leslie, executive chef of Bank’s Michelin-starred the Black Swan and Oldstead was the North East & Yorkshire Winner of 2025, that took the judges by storm, having his self-taught skills pay off.

Will Lockwood, 2023’s winner, is often praised for his creative culinary style that is produce focused, using food grown on the Bank’s family farm and supplemented by local suppliers.

Tommy himself, holds multiple titles of 2016, 2017 and 2020 – and is the driving force behind the concept. The team at Roots will present winning dishes from all three contestants as part of this delicious 6-course tasting menu.
The trio have curated an intricate menu showcasing both the Group’s hyper-local and regenerative ethos that’s echoed at Roots, the well regarded fine-dining restaurant in York, alongside each chefs’ victorious dishes.

Menu highlights include:
~ Buried Treasure by Will Lockwood: awarded a perfect 10 by Angela Hartnett, the dish sees a medley of scallops, razor clams, charred leeks, and mussels, pickled in elderflower vinegar, finished with potato emulsion and torched Kileen cheese.
~ Turbot ‘Strawberries & Cream’ by Tommy Banks: celebrating traditional techniques with a modern twist, turbot fillets, pan fried, are served atop a tartare of strawberries, golden beetroot and fennel bulb. Tableside, the plate is finished with cream reduction, chive oil and delicately pickled green strawberries.
~ Make The Moors Never Change by Callum Leslie: inspired by the moors of North Yorkshire, his home and that of author Emily Bronte’s – mushroom ice-cream, made from foraged ceps sits alongside heather honeycomb, sweet woodruff and chocolate ganache.

The Ultimate Great British Menu is available at Roots on 1, 8 May and 26 June 2025 with additional dates to be announced in due course.
Tickets are priced at £195pp with optional wine pairing for £85 or £145.
Tommy and his team kept hold of their Michelin star accolade at Roots and Black Swan at Olstead this year, which confirms how great their culinary skills and dedication to excellence are and how each restaurant of Tommy’s will continue to grow.
