‘Bucket list’ moment for duo behind award winning Helmsley restaurant

Tom and Laurissa Heywood, the duo behind one of our favourite restaurants in Helmsley, Pignut & The Hare, have announced the release their first book.

The Forager’s Table is a recipe book, taking inspiration from their delicious seasonal dishes served at Pignut & The Hare.

Tom and Laurissa Haywood said: “We’re so excited to finally share The Forager’s Table. For us, it’s more than just a cookbook – it’s a celebration of something we truly love.

Featuring 80 seasonal recipes inspired by the North Yorkshire landscape, their new book celebrates wild ingredients and sustainable practices.

The book release comes after the success of their intimate, 18-cover restaurant, originally named Pignut before the couples move to a new site in Scawton. 

The popular restaurant has been awarded three AA Rosettes, recognised in the Michelin Guide, and won the Craft Guild of Chefs Sustainable Restaurant Award 2025.

As Autumn takes centre stage, the new book promising to lingers in the richness of the cooler months, capturing the fruits, berries and roots that define the season.

Hedgerows and woodland walks inspire dishes such as honey-glazed duck breast with wild plum hoisin, blackberry-cured halibut with fennel and whipped crème fraîche, and venison loin with sloe gin sauce and elderberry purée.

The book is available for pre-sale now and will be published on December 10th.
