This March, Pearly Cow, York, the first of a brand-new restaurant group will launch

A York restaurant that cooks over fire for flavour, Pearly Cow’s ethos throughout is to respect ingredients, prepare them well and present them beautifully. A celebration of the Yorkshire Dales and the nearby North Sea, the team has focused heavily on carefully identifying local suppliers. R&J Farmers and Hodgson’s Fish will help them source the best quality local ingredients whilst celebrating the very best ingredients from across the British Isles too.
Slow-farmed meats, sea-fresh seafood, and just-picked plants are cooked over a wood and charcoal Mibrasa Grill. Diners will find steaks from sirloin to Côte de Boeuf are served with beef fat chips, bone marrow and creamed spinach, half-grilled Whitby lobsters, and coal-roasted aubergines with sweet and sour peppers a kale pesto and rose harissa.
An eponymous dish of 45-day aged fillet of beef tartare, oyster cream, beef jam and Exmoor caviar with a charred sourdough sets the scene, whilst an impressive selection of crustaceans on ice include fresh oysters served traditionally, potted Whitby crab and a seafood indulgence of Fruits de Mer for two all reflect the purest taste of the wild.

Wonder-filled sweet treats include a blackberry and lemon baked Alaska for two, pistachio soufflé and white chocolate ‘pearl’ and provides the theatrical touches. A handpicked wine list will feature classics, new-world adventures and celebrate English sparkling whilst a curated cocktail collection will take inspiration from the local surroundings.
A team of coveted in-house designers fell in love with No.1 GuestHouse‘s contrasting lighter feminine elegance of its Georgian building and the darker masculine craftsmanship of the medieval architecture found throughout the city, which is replicated in the design throughout.
Dry-ageing fridges alongside wine and cheese displays at Pearly Cow, York
The restaurant’s natural textures and finishes of the four adjoining dining rooms will be used to achieve a cosy and atmospheric experience with key elements such as dry-ageing fridges alongside wine and cheese displays being central to the design. A private dining room seating up to 12 people will be an ideal space for gatherings whilst alfresco dining in the summer months is destined to be popular.
Brothers Tristan, James, and Tom Guest have turned their attention to restaurants following the launch of their successful boutique hotel group, GuestHouse in 2021. The trio has identified cities with ever-evolving vibrant food scenes where Pearly Cow is destined to flourish. York will be the Pearly Cow’s launch location followed by Margate later in the year and Brighton early 2024.
