The Black Bull Sedbergh launch new restaurant concept

Chef-owner of The Black Bull Sedbergh, Nina Matsunaga, has launched a brand-new restaurant concept, Tsuchi, showcasing the best of British produce.
The Black Bull is a 17th-century inn just on the edge of the Yorkshire Dales. It features an innovative and subtly Japanese-influenced menu, along with gorgeous rooms for an overnight stay.

Tsuchi is Nina’s new passion project. It’s a creative yet considered tasting menu served at their picturesque venue from Wednesday to Saturday.
Tsuchi is the Japanese word for ‘earth’ or ‘soil’, representing the foundations of life and the responsibility of caring for our planet.

Chef-owner at The Black Bull Sedbergh, Nina, said: “Tsuchi is a deeply personal project, it’s rooted in a lifelong relationship with food, nature, and heritage. The name itself reflects not only the importance of where our food comes from, but also the responsibility we have to honour and protect it.
“I wanted Tsuchi to be more than just a restaurant. It’s a reflection of my belief that great food should nourish both people and planet.”

This ethos is demonstrated in Nina’s new menu, where she showcases seasonal British produce and a commitment to eating well. You can expect Lincolnshire smoked eel, Cumbrian samphire and Hereford beef, all accompanied with expertly paired wines.
Nina’s vision has been greatly influenced by her German and Japanese heritage. She combines seasonal British produce with the traditions of her international background.
The Tsuchi tasting menu is priced at £85 per person for seven courses. It’s an addition of £55 per person for a matched wine flight.
If you fancy a trip to The Black Bull Sedbergh, their tasting menu is served on Wednesday to Saturday from 6pm to 9pm. It is also available on Saturdays at lunch, served from 12 pm to 3 pm.
