Dales Chef Launches Her First-Ever Tasting Menu

Nina Matsunaga, chef-owner of The Black Bull, Sedbergh, a historic coaching inn located on the edge of the Yorkshire Dales National Park, recently listed among SquareMeal’s UK top 40 female chefs, has introduced her first-ever tasting menu.
The inn’s double AA rosette-awarded restaurant has been renowned for its delicious foodie offerings since Nina and her team took over the reins in 2018.
Ever since they’ve worked tirelessly to ensure that their handpicked local suppliers provide the very best ingredients from the Dales and surrounding areas at The Black Bull in Sedbergh.
This central ethos has inspired Nina’s innovative plan to bring a special tasting menu to the table.
Celebrating all the culinary delights the Western Dales has to offer, this spectacular new menu serves up tantalising seasonal delicacies such as: ‘’Isle Of Mull Scallop, Bergamot & N25 Caviar.’’ ‘’ Lakeland Venison, Yorkshire Rhubarb, Fennel,’’ ‘’Pasture Fed Beef Sirloin, Mushroom & X.O,’’ ‘’Torched Baron Bigod, Fig Leaf, Orange,’’ and ‘’Dark Chocolate, Cherry & Macadamia.’’
Nina Matsunaga said: “I’ve really enjoyed creating the Black Bull Sedbergh’s first-ever tasting menu, the menu features an array of amazing locally sourced and reared British seasonal produce, with a few little twists added to enhance each dish taken from my Japanese and German heritage.
Many of the dishes I’ve created are specifically designed to introduce new flavours and ingredients to our diners, including things that you might not expect to see on the menu in a historic coaching inn in the Yorkshire Dales.’’
The tasting menu at The Black Bull in Sedbergh is priced at £79 per person for seven courses, with an additional £49 per person for a matched wine flight.
The tasting menu is served at dinner Wednesday to Saturday from 6pm to 9pm and is also available on Saturdays at lunch, served from 12pm to 3pm.
The Black Bull Inn in Sedbergh also boasts an idyllic walled garden home to the Stables Bar & Meadow dining area, the perfect spot for summer alfresco dining or glass of something as you take in the views of the Howgill Fells.
