Legacy at The Grand, York to be rewritten by Chef Kevin Bonello
Legacy at The Grand in York has announced an exciting new restaurant concept led by Culinary Director Kevin Bonello, who is all about celebrating Yorkshire ingredients and local craftsmanship.
This week, Kevin shared his goal of making Legacy one of the UK’s top fine-dining spots, rivalling the very best across the country.
With a background that includes earning a Michelin star at De Mondion in Malta, Kevin has been bringing his culinary expertise to The Grand since he joined in 2023.
The Legacy team launched their ‘Evolution through the Eras’ menu back in June 2024, and now Kevin is ready to roll out a brand-new concept starting November 4th.
This fresh menu, called “Three Seasons,” will focus on the stories behind the ingredients, showcasing Kevin’s unique cooking techniques.
Get ready for a truly special experience. The restaurant will feature ingredients foraged from Kevin’s own village just outside of York, even making use of handcrafted utensils and wooden cutlery rests made by him.
The restaurant itself will see hand-painted murals by local artist and former employee Lily Roberts, beautiful bespoke furniture, including a cheese trolley made by talented woodworker Ollie Abell and new fermentation cupboards.
As York continues to thrive as a Yorkshire destination, with dining playing a huge part in its charm, Kevin is excited to share his vision with everyone.
In 2025, York welcomed 8.88 million visitors, bringing £2.08 billion to the local economy, with over a quarter of that spent on delicious food and drink.
Kevin believes there’s even more room for growth, and he, along with his amazing team, is eager to give diners a new reason to visit and enjoy their latest menu. We can’t wait for you to experience all that Legacy has to offer.
Kevin said: “Legacy’s new future allows the ingredients to shine. The only thing taking centre stage in our restaurant is the food and the guest experience.
“Anyone who knows me will say I am more than a little obsessed with food and the story behind it. This is my food love story played out.
“We will connect guests to the entire food journey when they dine in Legacy. I’ve travelled all over the world in my career but found the inspiration I was looking for in my very own village.
“There have been months of preparation behind the scenes, and we, as a team, are so excited to be finally bringing it to the table in York.”
Kevin’s expertly crafted Three Seasons menus will change based on ingredient availability and local seasonality rather than following current trends. Each ingredient is rooted in Yorkshire’s provenance, highlighting a story of the region through local farmers, producers, fishers, and the hotel’s own rooftop beehives.
Starting in November, the focus will be on Game & Wild. In February, the menu will shift to Foraged & Roots, and in June, it will transition to Fish & Harvest.
