Local Yorkshire chef opens new restaurant in Boston Spa, Restaurant Amor

Chef Nikki Pybus, a native of Yorkshire, has purchased the former CORA restaurant that sadly closed down in July 2023 and opened Restaurant Amor.

The beautiful space has recently reopened as Amor, a new restaurant that accommodates up to 20 diners, found on the village’s High Street.

Previously owned by female powerhouse Elizabeth Cottam, owner of HOME and The Owl in Leeds City Centre, she is pleased the space is moving forward and receiving a new lease of life.

Speaking with the owner of Restaurant Amor, Nikki said the restaurant was created with one goal in mind, to bring guests something “extra special”, an experience and a memory.

With a strong Michelin background, naturally he is ticking all the boxes with outstanding food and drink, an affordable price point and a comfortable atmosphere everyone is sure to love.

Restaurant Amor officially opened its doors on April 3rd, already completing their first month of business. Starting off strong with a lunch experience, Nikki has exciting plans to bring an evening experience to Restaurant Amor very shortly.

Born and raised in Yorkshire, Nikki Pybus has worked in exceptional restaurants across the country, taking him from the Cotswolds to Durham. Now returning to his roots, his dream of starting his own venture in West Yorkshire has finally taken shape.

Nikki said, “Boston Spa is such a beautiful place with a wonderful community feel, I honestly don’t think I could have been any luckier with a location!”

Talking about the opening of Restaurant Amor, he went on to say: “I could not have asked for a better opening and warmer reception from the kind people of West Yorkshire, everything has been super smooth and the feedback has been brilliant. That’s why I love cooking for people so much”.

With an exciting menu ready for new customers to taste, Nikki has taken inspiration from his personal dining experiences at some of the best restaurants across England, as well as the magnificent suppliers right on his doorstep, including Sykes Farmhouse for top-quality meats.

Nikki said, “One of the biggest influences of my career, would undoubtedly be James Close of the two Michelin-starred restaurant ‘The Raby Hunt’, here I realised the importance of using the best ingredients to ultimately deliver the best end product. Every day I will strive to improve dishes, develop and be better”.
