Aloo Baingan Recipe – Potato and Aubergine Curry

Following on from her sold-out event at West Yorkshire’s Boundary House in Methley, where she showcased a range of Indian dishes over a four-course meal with their in-house chefs, Freda shares with us her Aloo Baingan Recipe. This is the perfect healthy winter warmer to blow away those post-Christmas blues.
Adding a few interesting ingredients to make this dish really pop, it was a hit on the night of the takeover and it’s just as easy to create in the comfort of your own kitchen.
Ingredients
2 medium size eggplant/aubergine chopped into approx 3cm squares
3 medium potatoes peeled and chopped to a similar size as the eggplant
1 1/2 onion finely diced
1 tbsp grated ginger
1 tbsp crushed garlic
1 tsp mustard seeds
5-6 curry leaves (buy dried ones if you can’t get hold of them fresh)
Fresh coriander to garnish
Spices
1 tsp cumin seeds
1 tsp ground coriander
1 /2 tsp mild chilli powder
1/2 tsp chilli flakes
1 tsp dried mango (amchur) powder
1 tsp garam masala
Salt to taste
Oil

Method

  • Heat some oil in a large saucepan and add the mustard seeds and curry leaves. When they start to ‘pop’ add the onion and cumin seeds and sauté until translucent.
  • Add all the other spices and stir through.
  • Add the potato and combine with the spices. Add some water (approx 1 cup) to cover the potatoes. Turn down the heat and let the potato cook for 10-15 mins until al-dente.
  • Add the eggplant and combine with the sauce. Cook until the eggplant is tender and cooked through
  • Garnish with coriander and Serve immediately with steamed rice or roti
