Celebrating Lishman’s 30th Birthday with their Chorizo & Chickpea Jumble

Lishman’s of Ilkley is a multi-award winning butchers in the spa town of Ilkley who are set to celebrate their 30th Birthday in style today!  Their mini food festival will run from 2pm-8pm and includes Lishman’s BBQ, cake from Edward Street Bakery, craft beer from Ilkley Brewery and gin from Slingsby, what more could you want!
To celebrate their birthday they shared this delicious and easy recipe with us.
Lishman’s Chorizo & Chickpea Jumble
A Spanish-inspired casserole to serve up with some toasted sourdough or a heap of golden cous cous.
2 Lishmans Chorizos, cut into thick slices
1 red onion, sliced
2 garlic gloves, sliced
1 tsp smoked paprika
1 tsp cumin seed
400g tin cherry tomatoes
juice of 1 lemon
400g tin chickpeas, drained
1 handful flat leaf parsley, chopped
1. In a frying pan, fry the chorizo, onion and garlic for 5 minutes or until the chorizo is browning on the outside. Drain the excess oil, then stir in the spices.
2. Pour in the tomatoes, lemon juice, chickpeas and seasoning. Bubble for 5 minutes or more to thicken slightly, then sprinkle over the parsley. Serve with toasted sourdough bread.
