With the Easter break on the horizon, I love the idea of baking with the children. Here’s a really easy lemon cake recipe that I’d love to share with you; this beautiful lemon cake with lime buttercream is so fresh fragrant and reminds me so much of spring. It’s perfect to make over Easter with the children. It takes less than 20 minutes to prepare and less than 35 minutes to bake. Wishing you all a fabulous month ahead.
Easy Lemon Cake Recipe with Lime Buttercream
Ingredients
225g unsalted butter, softened
225g caster sugar
225g self raising flour
4 eggs
Juice of 1 lemon
For the buttercream
Juice of 1 lime & rind to garnish
85g caster sugar
100g butter
Method
Preheat the oven to 160C. Beat the softened butter and sugar until smooth and slowly add the eggs one at a time and mix thoroughly.
Gradually sift the flour into the mixture, add the lemon juice and mix in until a smooth batter has formed.
Grease a small loaf tin 8x20cm and pour in the cake batter. Bake for 30-35 mins until a skewer comes out of the centre clean.
In another bowl mix the softened butter with caster sugar until smooth, then add the lime juice. Spoon the buttercream over the cake as shown then sprinkle the grated lime over the top to garnish.
Serve on its own or with a dollop of fresh cream.
